Orzo Salad (made this last night and it was so yummy!): 1 cup orzo, 1 bag fresh baby spinach, 1 vine tomato diced, several mini sweet peppers chopped (I did red, orange, and yellow), sliced olives, chopped white mushrooms. I mixed all the veggies and orzo in a big bowl then drizzled with olive oil, mized with salt and seasoned pepper to taste. Sprinkled fresh parm on top for a treat!
