Serves 6


  • 6 large ripe Roma tomatoes cut in half
  • 2 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • ½ tsp fine sea salt
  • ¼ tsp freshly cracked black pepper
  • 2 tablespoons goat cheese
  • 12 small tender rosemary sprigs, you can use fresh chopped basil as well


Heat oven to 200 degrees

Lay a small grill on a pan. Combine Roma tomatoes with 1 tablespoon of olive oil & balsamic vinegar. Place Roma tomatoes, cut side up on grill that is in the pan. Season Roma tomatoes with salt & pepper. Roast in the oven for 6 hours or until they are very tender and sweet. Set aside at room temperature & let cool before serving. Top with remaining olive oil, goat cheese and fresh rosemary or basil and serve.
